Lemon Mint Detox Drink

Ingredients:
1 teaspoon grated ginger

1 lemon, cut in half, half reserved for garnish

Several sprigs of mint

Directions:

Boil water and make ginger tea by pouring hot water into a cup with the ginger

Allow to steep for 2- 3 minutes

Pour the water from the ginger tea through a strainer to remove the ginger and pour into a glass

Squeeze juice from ½ lemon into ginger tea

Slice remaining half of lemon and use to garnish

Add several sprigs of mint

Drink warm or cool

Greek Tortilla Pizza

1 Serving // 15 Minutes Recipe profile: Vegetarian 1 whole-grain or sprouted-grain tortilla or wrap ½ cup prepared pizza sauce ¼ cup mushrooms, sliced ¼ cup red bell pepper, sliced ¼ cup onion, sliced 2 tablespoons kalamata olives, sliced 2 tablespoons (1 oz.) feta cheese, crumbled ¼ teaspoon dried oregano (optional) 1 Preheat oven to 400 degrees F. Line a baking sheet with foil or parchment paper. 2 Place tortilla on baking sheet and evenly spread with pizza sauce. Top with mushrooms, peppers, onion, olives, and feta. Bake for 10 minutes. 3 Sprinkle with oregano, if desired, before serving. Cut into slices. Per serving: 277 calories, 15 g fat, 29 g total carbohydrate, 11 g dietary fiber, 15 g protein

Raw Breakfast Energy Bars

Makes 6 bars- Ingredients:

  • 8 dates, chopped
  • 1/4 cup raw sunflower seeds
  • 1/4 cup raw almonds
  • 1/4 cup shredded coconut
  • 1-2 Tbsp. coconut oil, softened
  • dash of salt
  • 1 Tbsp. chia seeds
  • 2 Tbsp. cacao nibs
  • optional: coconut butter, softened

Directions Combine dates, sunflower seeds, almonds, shredded coconut, coconut oil and salt in food processor or blender until textured batter is formed (about 2-3 minutes). Start with 1 tablespoon coconut oil and add more if blending is difficult. Transfer to bowl and stir chia seeds and cacao nibs into batter. Use hands to form batter into rectangular shape (about 1/2″ thick) on baking sheet. Place in freezer for 10 minutes to harden. Remove and slice into bars. Drizzle or spread coconut butter on top (if using). Store in refrigerator.
